Southern Twists on Breakfast

From chicken and waffles to bacon and…everything, favorite breakfast foods are not just for breakfast anymore. And they’re growing in popularity—breakfast is expected to be a $33.4 billion business by 2015.1

Operators can capitalize on the daypart versatility and popularity by infusing breakfast dishes with southern flair. Southern cuisine is one of the Top 10 trends for 2014 according to Flavor & The Menu, and these familiar flavors are starting to show up on mainstream menus in surprising ways.2

Anytime Entrees

Adding flavorful mix-ins to Hellmann’s® Real Mayonnaise can give a unique twist to favorite southern breakfast dishes, like this recipe:

Chicken and Waffle Sandwich Recipe

4 oz. Hellmann’s® Real Mayonnaise

6 tsp. pure maple syrup

1/10 tsp. cayenne pepper

8 oz. shredded cabbage and carrots

8 waffles, heated

2 oz. breaded cooked chicken breast

8 slices applewood-smoked bacon, fried until crispy

4 oz. tomatoes, thinly sliced

  • Prepare Maple Coleslaw: In small bowl, combine mayonnaise, maple syrup and pepper. Stir in shredded cabbage and carrots. Refrigerate 1 hour or until ready to use.
  • Layer 1 waffle with 1 chicken breast, 2 slices bacon and 1 slice tomato. Top with 2 oz. Maple Coleslaw and remaining waffle; repeat to make 4 sandwiches.
  • Serve immediately.
